Healthy porridge with berry compote

Paul @daddelicious brings us his healthy porridge recipe – so rich and creamy and full of health enhancing goodness. It’s such a speedy breakfast. It takes ten minutes and will keep you energised throughout the the day, thanks to all the incredible metabolism boosting fats, fibre and plant proteins.

I added a good dollop of Greek yoghurt with a raspberry and blackberry compote for some extra colour and zing.

 

Ingredients:

1 cup rolled oats

1/4 cup ground flax seeds

1/4 cup ground chia seeds

1 cup water

1/2 cup coconut milk

frozen berries of your choice

Greek yoghurt to serve

 

Method:

  1. Add the oats and ground seeds to a pan with the water and coconut milk and mix together. Cook on a low heat for five minutes stirring every minute until the oats have soaked up the liquid.
  2. Add a splash of water tp another pan with the frozen berries of your choice. Gently squash some of the berries in the pan and simmer for a couple of minutes letting the sauce thivken to a good consistency.
  3. Serve porridge warm with a dollop of yoghurt and the berry sauce.
