Baked cinnamon spelt doughnuts

Baked cinnamon spelt doughnuts, definitely one of my kids favourite treats but healthy enough for breakfast. Enjoy them as they are or top with honey, peanut butter, maple syrup, bananas… All you need to make them is silicone doughnut moulds, just a few Β£ from Amazon.

Makes 6 doughnuts


🍩 1 cup spelt flour

🍩 1 tsp baking powder

🍩 2-3 tsp ground cinnamon

🍩 ¼ tsp salt

🍩 ½ cup almond milk

🍩 1 tsp vanilla extract

🍩 1 egg

🍩 1/3 cup coconut or veg oil

🍩 1/4 cup @nkdliving erythritol sugar alternative

🍩 1/4 cup coconut sugar

🍩 Extra cinnamon and erythritol sweetener for the coating


🍩 Preheat oven to 180 degrees

🍩 Using a whisk to mix the oil, sugars, egg, milk and vanilla in a bowl

🍩 In another bowl, sieve in all the dry ingredients and mix well

🍩 Pour the wet mix into the dry mix and whisk together till combined

🍩 Spray the doughnut mould with oil spray

🍩 Spoon the mix into the doughnut mould and bake for 12 – 14 minutes until a knife comes out clean

🍩 Let them cool down for a few minutes so you can handle them. Mix the extra cinnamon and erythropoietin in a shallow bowl. While still warm, coat the doughnuts in this mix and enjoy
