Yummy Rice Pudding
This rice pudding is an absolute favourite in our home. So tasty it can be a dessert but we often have it for breakfast. Vegan, healthy and deliciously filling.
Ingredients. (Makes 4 portions)
🍓1 cup short grain rice
🍓4 cups almond milk (I use @alpro roasted almond original)
🍓1 vanilla pod
🍓1 tablespoon coconut sugar
🍓Rinse the rice till the water runs clear
🍓Put the rice, sugar, one cup of milk, and vanilla (slice the pod down the middle and scrape out the seeds) into a large pan.
🍓Over a medium heat, cook the mixture till the liquid is absorbed. Stir to make sure it doesn’t stick.
🍓Add another cup of milk and cook gently, stirring till the milk is absorbed.
🍓Repeat till you’ve used up all 4 cups of milk.
🍓Top with whatever you like and enjoy! For breakfast I like to add fruit, seeds and honey. It’s delicious hot or cold.
