24 Jul Pork kebab with a twist
It’s BBQ season! And this delicious twist on a classic pork kebab is perfect for any summer day. Serve with pitta or wraps, vegetables, tzatziki, and humus, it’s going to become a summer family favourite!
Serves 2-3 so multiply amounts as needed
• 1kg pork cubed
• 1½ tbsp olive oil
• 1½ tsp paprika
• 3/4 tsp ground cumin
• 1 tsp ground coriander
• 3/4 tsp salt
• 3/4 tsp garlic powder
1. To a large bowl add the olive oil, paprika, ground cumin, ground coriander, salt and garlic powder. Mix to form a paste. This is the marinade.
2. Add the pork cubes and using your hands massage the marinade into the pork. Cover and in the fridge for at least an hour.
3. Skewer onto metal skewers.
4. Cook over preheated coals for about 20 minutes (you could also cook these in the oven or under the grill).
