
22 Feb Strawberries and Cream breakfast pots
An absolutely delicious breakfast pot to keep the taste buds alive in the morning.
A simple strawberry chia jam and two ‘vanilla’ options. Overnight oats and yoghurt. You can mix and match as you like.
Strawberry Chia Jam
INGREDIENTS
🔸2 cups chopped strawberries, chopped into small cubes
🔸2 tablespoons chia seeds
🔸2 tablespoons maple syrup
METHOD
🔸Put all the ingredients into a small saucepan and cook for about 7 minutes. It will thicken as it cools.
Vanilla Overnight Oats
INGREDIENTS – makes 4 portions
🔸2 cups jumbo oats
🔸2 cups almond or oat milk
🔸2 tablespoons chia seeds
🔸seeds from 1 vanilla pod
🔸2 tablespoons maple syrup
METHOD
🔸Mix all the ingredients in a bowl. Stir well to combine. Leave in the fridge overnight. The next morning divide into portions.
Vanilla Yoghurt
INGREDIENTS
🔸2 cups Greek yoghurt (Fage is my favourite)
🔸seeds from 1 vanilla pod
🔸2 tbsp honey
METHOD
🔸Mix all the ingredients in a bowl till well combined
